Crispy Pizza Tortilla

Ingredients
1 organic flour tortilla burrito size (or any tortilla you like)
½ cup sauté mashrooms
1/4 cup sauté red bell pepper
2 tbsp pizza or marinara sauce
1 cup fresh spinach lightly chopped
a handful of fresh basil
1/2 plant based mozzarella cheese
1 tbsp avocado oil
Instructions
Cut the tortilla straight from the center to the side.
Place the pizza/marinara sauce, keep on adding the ingredients on each corner and sprinkle the basil all over the ingredients.
Move counterclockwise and fold the tortilla over itself all the way until all corners are folded.
Heat the oil on a skillet and grill the tortilla on one side for about 3 minutes. Flip it and grill the other side.
