Gazpacho
Ingredients
1/2 cup olive oil
2.5L organic heirloom tomatoes quartered (around 5)
1 english cucumber peeled, seeded and chopped
1 red bell pepper seeded and chopped
juice 1/2 lime
2 tbsp fresh parsley
salt & pepper to taste
Instructions
Place all ingredients in a blender and blend to desired smoothness. Don't overland, it must have some texture.
Season and chill.
