Gazpacho


Ingredients

  • 1/2 cup olive oil

  • 2.5L organic heirloom tomatoes quartered (around 5)

  • 1 english cucumber peeled, seeded and chopped

  • 1 red bell pepper seeded and chopped

  • juice 1/2 lime

  • 2 tbsp fresh parsley

  • salt & pepper to taste


Instructions

  1. Place all ingredients in a blender and blend to desired smoothness. Don't overland, it must have some texture.

  2. Season and chill.
