Simple Pesto

I never liked pesto until I decided to create my own. I skip the garlic but feel free to add as much as you like.

Ingredients

  • 1 + 1/4 tbsp pine nuts (divided)

  • 2 cups fresh basil leaves no stems

  • 3 cups spinach (or kale)

  • 2 tsp lemon juice

  • 2 tbsp olive oil

  • salt


Instructions

  1. Roast 1 tbsp of pine nuts by adding them into a skillet and cook on the stove over medium heat for approximately 3 to 4 minutes.

  2. In a blender pulse the rest of the pine nuts with the fresh basil, lemon juice and salt. Once combined add the olive oil until desired consistency.

  3. Enjoy with your favorite pasta and sprinkle with the rest of the roasted pine nuts.
