Lazy Sunday Granola Bars

Ingredients

  • 1 cup pitted medjool dates

  • 1/4 cup liquid sweetener - maple syrup, honey or agave nectar 

  • 1/4 cup almond butter - or any nut butter substitute

  • 1 cup roasted walnuts (skip the parchment paper for extra crispiness)

  • 1 cup rolled oats

  • 1/2 cup hemp seeds

  • 1 pinch sea salt


Instructions

  1. Process dates in food processor for a minute or until a dough is formed.

  2. Mix oats, hemp seeds, salt and dates into a bowl.

  3. Warm liquid sweetener and nut butter in a small saucepan over low heat. Once mixed and creamy pour over mixture and mix.

  4. Once thoroughly mixed, transfer into a baking dish or other small pan lined with plastic wrap or parchment paper so they lift out easily.

  5. Press down firmly until uniformly flattened – I use a wooden spoon but the bottom of a cup or glass also works.

  6. Cover with parchment or plastic wrap, and transfer to fridge for at least 30 minutes.
