Lazy Sunday Granola Bars
Adapted from Minimalist Baker
Ingredients
1 cup pitted medjool dates
1/4 cup liquid sweetener - maple syrup, honey or agave nectar
1/4 cup almond butter - or any nut butter substitute
1 cup roasted walnuts (skip the parchment paper for extra crispiness)
1 cup rolled oats
1/2 cup hemp seeds
1 pinch sea salt
Instructions
Process dates in food processor for a minute or until a dough is formed.
Mix oats, hemp seeds, salt and dates into a bowl.
Warm liquid sweetener and nut butter in a small saucepan over low heat. Once mixed and creamy pour over mixture and mix.
Once thoroughly mixed, transfer into a baking dish or other small pan lined with plastic wrap or parchment paper so they lift out easily.
Press down firmly until uniformly flattened – I use a wooden spoon but the bottom of a cup or glass also works.
Cover with parchment or plastic wrap, and transfer to fridge for at least 30 minutes.
