Chocolate Salted Caramel Chia Pudding

Makes two puddings
Ingredients
Chocolate Pudding:
2/3 cup chia seeds
3 tbsp cocoa powder
2 tsp maple syrup (or liquid sweetener of choice)
2 cup unsweetened plant based milk (I used almond)
1 tsp vanilla extract
Caramel Sauce:
2/3 cup pitted mejdool dates
2/3 cup hot water
1 tsp vanilla extract
pinch of salt
Instructions
Chia Pudding:
In a small mixing bowl whisk together the chia seeds, cocoa powder, maple syrup, soy milk and vanilla extract.
Once everything is combined well, set it in the fridge for at least 1 hour.
Caramel Sauce:
Soak the pitted dates hot water for about 10 minutes. Then transfer the dates and soaking water to a blender or food processor, add the vanilla extract and a generous pinch of salt and blitz until smooth and creamy.
Spoon the chia pudding into two glasses and top with the salted caramel sauce. Sprinkle with roasted chopped almonds, fruits or dark chocolate shavings. Enjoy!
