Chia Cookies
This recipe has been adapted from Pride of India
Ingredients
1 1/2 tbsp chia seeds, flaxseeds, poppy seeds.
1/4 cup almond milk
two ripe bananas
3/4 cup oats
1/4 chopped walnuts
1/4 cup unsweetened shredded coconut
1/4 cup chopped dates or raisins
1 tbsp almond butter
Pinch of cinnamon
Instructions
Heat your oven to 350f.
Put chia seeds, flaxseeds, poppy seeds and almond milk in a bowl and stir the mixture. Let it sit for about 10 minutes; it will create a nice gel-like consistency.
In a separate bowl, take two ripe bananas and mash them.
Now pour the chia seed gel to the mashed banana bowl along with oats, shredded coconut, almond butter, and cinnamon. Mix it well. Finally add chopped walnut and dates or raisins.
Scoop out dough (around 1-2 tablespoons) onto a greased cookie sheet and use a spoon/fork to press the dough down a little. It should form a good cookie shape now.
Place in oven and bake for 17-20 minutes, or until the bottom of the cookies have browned a tiny bit.
Take them out, let cool and enjoy.
