Amaretti Cookies

Ingredients

  • 1 1/2 cup almond flour, sifted

  • 1/3 cup granulated sugar

  • pinch salt

  • 1/4 cup aquafaba - you can watch how to make it here

  • 1/4 tsp lemon juice

  • 1/2 tsp almond extract

  • powdered’ sugar, as needed


Instructions

  1. Preheat oven to 320 degrees F. Line a cookie sheet with parchment paper or a silicone baking mat.

  2. In a large bowl, whisk together almond flour, sugar and salt until evenly incorporated.

  3. Make the Aquafaba and mix it with lemon.

  4. Add aquafaba and almond extract to dry ingredients and stir until mixture forms a soft, sticky dough, kneading with your hands if necessary. *

  5. Portion the dough into 1-inch balls. Roll into a smooth ball, then roll in powdered sugar. Arrange on parchment or silicon-lined baking sheets, leaving 1 inch of space between cookies.

  6. Bake for 30 to 35 minutes until tops are cracked and bottoms are just starting to darken. Remove from oven; let cool a few minutes, then transfer to wire racks to cool completely.

    * to make cookies in different colors add 1 tbsp of cacao, matcha or wheat grass into the mix before adding the aquafaba.
