3-layers Chocolate & Berries Chia Mousse

Makes two puddings

Ingredients

Chocolate Berry Base:

  • 1 tbsp boiling water

  • 1 tbsp of honey, maple syrup or coconut sugar

  • 1 tbsp of cacao powder

  • 1 tsp of vanilla extract

  • ¼ cup mixed berries

Chocolate Yogurt Chia Mousse:

  • 1 cup of plant-based yogurt (vanilla, coconut or plain)

  • 2 tbsp of chia seeds

  • ¼ cup raw cacao powder

  • ¼ cup plant-based milk

  • 2 tbsp raw honey or maple syrup

  • 1 tsp vanilla extract

  • pinch of salt

Vanilla Chia Layer:

  • ¼ cup of chia seeds

  • 1 tsp vanilla extract

  • 1 tbsp of raw honey or maple syrup

  • ½ cup of plant-based yogurt (vanilla, coconut or plain)

  • ½ cup plant-based milk

  • dark chocolate shavings to decorate


Instructions

  • Chocolate Berry Base:
    1.
    Place the berries in a bowl and mash with a fork or the back of a spoon.
    2. Add all the other ingredients and stir until smooth and syrupy.
    3. Spoon into serving glasses or jars and set aside.

  • Chocolate Yogurt Chia Mousse:
    4.
    Add all ingredients to a high-speed blender and mix until the chia seeds are ground and the mixture is a smooth mousse-like consistency.
    5. Add sweetener if necessary.
    6. Spoon on top of the chocolate berry base and refrigerate.

  • Vanilla Chia layer:
    7.
    Add all ingredients to a mixing bowl and whisk vigorously to combine.
    8. Set aside for 30 minutes to thicken.
    9. Spoon on top of the mousse layer.
    10. Cover and let rest in the fridge for 2-3 hours to achieve a pudding-like consistency.
    11. Best eaten within 24 hours however puddings will stay fresh, covered, for up to 3 days.
