Strawberry Squares
Makes ten squares.
Ingredients
Base:
1 cup rolled oats
1/2 cup datess
Strawberry Layer:
1 cup cashews, soaked for at least 30’ in boiling water, rinse and drain
1 cup coconut milk - only the thick part (kept on fridge overnight)
1/2 cup strawberries + 1/2 cup for topping
1 tbsp maple syrup
1 tsp vanilla extract
1 tbsp coconut oil
Instructions
Base:
Add oats and dates to a food processor until sticky.
Line the mold (I used a 9x5 loaf pan but you can use whatever you have available) with baking paper and spoon the crust mix onto the mold and press tightly down. Place into freezer.
Strawberry Layer:
Rinse the soaked cashews under running water and place into high speed blender together with the coconut milk (thick part only) and rest of ingredients except coconut oil. Mix until completely smooth and add the coconut oil at the end pulsing a couple of times.
Pour the mixture on top of the base and freeze for at least three hours.
Top with strawberry slices and cut.
