Salted Chocolate Volcano

Ingredients

Dry:

  • 3/4 cup all purpose baking flour (GF works well)

  • 1/4 cup coconut sugar

  • 1½ tsp baking powder

  • ¼ tsp salt

  • ¼ tsp cinnamon

  • 2 large tbsp cacao/cocoa powder

Wet:

  • 1 cup + 2 tbsp plant-based milk

  • ½ tsp apple cider vinegar

  • ½ tsp vanilla extract

  • 2 tbsp cinnamon apple sauce (egg replacement)

  • 1/3 cup vegan butter (earth balance)

Filling:

  • 100g organic dark vegan chocolate, cut into cubes

  • 1/4 cup walnuts

  • ¼ tsp Himalayan sal


Instructions

Cake: 

  1. Preheat the oven to 350 degrees F and grease four small pudding molds.

  2. Place all of the wet ingredients in a small saucepan, then place over a low heat and stir until melted and combined.

  3. Add the dry ingredients to a mixing bowl and combine well, then pour in the contents of the saucepan and stir until just combined.

  4. Fill each of the pudding tins half way up with the mixture, then place 2-3 cubes of chocolate and a sprinkling of salt in the middle, add walnuts (optional). Pour over the rest of the mixture, then give each mold a tap on the surface to level them out.

  5. Place on a baking tray, then into the oven for 15 minutes.

  6. Serve fresh from the oven with shredded chocolate or cocoa powder.
