Ingredients

Cookies

  • 1 1/2 cup raw nuts (I used walnuts & almonds)

  • 5 pitted dates - soaked in warm water for 10’

  • 1/3 cup cacao powder

  • 2 tbsp melted coconut oil

  • 2 tbsp maple syrup

  • 1 pinch sea salt

Filling

  • 1/2 cup coconut butter

  • 1/2 cup cashews - soaked in boiling water for 20’ (drain and rinse)

  • 1/4 tsp vanilla extract

  • 1-2 tbsp maple syrup (optional)


Instructions

  1. Cookies: place all the ingredients except the coconut oil in a blender or food processor. Blend until smooth. Add the coconut oil and pulse a couple of times. On a clean surface (I use a piece of parchment paper) roll mixture out until it’s about ¼” thick. Use a circular cookie cutter to cut out cookies. Transfer cookies to a plate and place in freezer to set.

  2. Filling: blend cashews and coconut butter, maple syrup (optional) and vanilla extract until smooth.

  3. Remove cookies from freezer. Spread icing over cookies to create sandwiches. You may want to set them back in freezer for 15 minutes to set before enjoying. Store in refrigerator.
