Lime Kiwi Cheesecake
This recipe has been inspired from Nutrition in the Kitchen
Makes three ramekins
Ingredients
Crust:
1/2 cup unsweetened coconut, shredded
1/2 cup walnuts
2 mejdool dates
1 tbsp water
Filling:
1 ripe avocado (not over-ripe)
3/4 cup soaked raw cashews previously soaked in boiling water for 30 minutes - drain and rinse
juice from one lime
1 tsp lime zest
1/2 tbsp agave
slices of kiwi and shredded coconut for garnish
Instructions
Crust:
Line the base of your molds with baking paper.
Place the coconut and walnuts in a food processor. Blend until coarsely ground. Add the dates and process until the mixture begins to stick together. If it doesn’t stick together add a little bit of water. Press about 2 tablespoons of the mixture into the bottom of each cup, about ¼ full
Place it in the freezer.
Filling:
Process all of the filling ingredients in a food processor until smooth. Divide the mixture between the molds. Smooth the top.
Garnish with a fresh slice of kiwi or shredded coconut..
Freeze for 60 minutes to set.
