Lime Kiwi Cheesecake

Makes three ramekins

Ingredients

Crust:

  • 1/2 cup unsweetened coconut, shredded

  • 1/2 cup walnuts

  • 2 mejdool dates

  • 1 tbsp water

Filling:

  • 1 ripe avocado (not over-ripe)

  • 3/4 cup soaked raw cashews previously soaked in boiling water for 30 minutes - drain and rinse

  • juice from one lime

  • 1 tsp lime zest

  • 1/2 tbsp agave

  • slices of kiwi and shredded coconut for garnish

Instructions

Crust: 

  1. Line the base of your molds with baking paper.

  2. Place the coconut and walnuts in a food processor. Blend until coarsely ground. Add the dates and process until the mixture begins to stick together. If it doesn’t stick together add a little bit of water. Press about 2 tablespoons of the mixture into the bottom of each cup, about ¼ full

  3. Place it in the freezer.

Filling: 

  1. Process all of the filling ingredients in a food processor until smooth. Divide the mixture between the molds. Smooth the top.

  2. Garnish with a fresh slice of kiwi or shredded coconut..

  3. Freeze for 60 minutes to set.

  4. Enjoy!
