Individual Chocolate Cake with Almond Butter Frosting

Ingredients

Cake:

  • 1 tbsp + 2 tsp cocoa powder

  • 3 tbsp oat flour

  • 1/8 tsp salt

  • 1 1/2 tsp coconut sugar

  • 1/4 tsp baking powder

  • 2 tsp coconut (liquid) or vegetable oil

  • 3 tbsp plant-based milk of choice, such as almond milk

  • 1/2 tsp pure vanilla extract

Almond Butter Frosting:

  • 1/4 cup almond butter

  • 2 tbsp pure maple syrup, honey, or agave

  • 3 tbsp regular or dutch cocoa powder

  • 2 tbsp plant-based milk of choice

  • 1 tsp pure vanilla extract


Instructions

Cake: 

  1. Preheat oven to 350 degrees F and lightly butter the small mold or ramekin.

  2. Combine dry ingredients in a medium bowl and mix well.

  3. Combine wet ingredients in a small bowl and once combined, mix with dry ingredients.

  4. Transfer to a little mold or ramekin and cook for 15 minutes.

Almond Butter Frosting: 

  1. Blend everything together until completely smooth. It's smoothest if you use a blender or food processor but can technically be done by hand if needed. Store leftover frosting covered in the fridge.

  2. Once the cake is done and has cooled down, cover with the frosting and toppings of choice.
