Crispy Tofu, Mushroom and Pesto Sandwich

Ingredients

  • 3-4 slices extra firm tofu

  • 1 tbsp tamari

  • 1 tbsp apple cider vinegar

  • 2 slices of bread (toasted)

  • 1-2 shiitake Mushrooms

  • 1/2 avocado

  • 2 tbsp pesto

  • lemon juice

  • 1 tbsp olive oil

  • salt


Instructions

  1. Press the tofu until water is removed. Heat the olive oil in a pan and cook each side until brown and crisyp. Add half of the tamari and the apple cider vinaigrette. Once the tofu is golden crispy, put aside and cook the mushrooms in the same pan for about 5 minutes. Add the rest of the tamari and apple cider vinaigrette.

  2. While the tofu and mushrooms are cooking make the pesto

  3. Toast the bread.

  4. Assemble the sandwich by spreading the pesto on one slice and avocado on the other one. Sprinkle the avocado with lemon juice and salt. Add the tofu and mushrooms.
