Chocolate Oatmeal Cupcakes
Makes four cupcakes
Ingredients
85g dark unsweetened chocolate bar (at least 70%)
1/2 can of lite coconut milk
2/3 cup oats
1/3 cup chopped almonds - or any other nut you prefer.
Instructions
Warm a pot of water on the stove. Place a bowl with the chocolate bar broken into pieces on the pot (make sure the bowl is not touching the water). Heat on low heat, while stirring frequently. Remove from heat when half of the chocolate is melted and continue stirring until all the chocolate have melted.
In another pan, heat the coconut milk and pour over the melted chocolate. Let sit for a couple of minutes, then mix well.
Mix the oats with the nuts and add to the chocolate mix.
Pour the batter into a greased cake tin. Let it cool and then place in the fridge for 4/5 hours or freeze for 2.
